With its soft straw-yellow hue, this wine opens on delicate aromas of slightly ripened white peach and pear, gently interwoven with hints of dried yellow flowers. On the palate, it offers a balanced tartness, good viscosity, and a pleasant interplay of minerality and freshness.
Pairings
It pairs well with raw fish appetizers and shellfish dishes, and is excellent with assorted fried foods.
Vinification
The harvest takes place around mid-August, at night, to preserve the grapes’ natural fragrance. The grapes are picked at the beginning of their technological ripeness to maintain acidity and freshness. After de-stemming, an extremely gentle pressing is used to avoid color extraction. The must undergoes natural settling, followed by fermentation at a controlled temperature for several days. The wine then matures on its lees for a few months.
