Vinification
Pinot Noir is an early-ripening varietal, typically maturing around late August or early September. The grapes are harvested at peak aromatic and polyphenolic ripeness, then destemmed and cooled for gentle pressing and short maceration over a few days. Alcoholic fermentation follows and lasts about a week. A small portion of the wine is then aged in oak to add complexity.
