					Vinification
Chardonnay is an early to mid-ripening varietal, typically reaching full maturity by the end of August. After harvesting, vinification is carried out using a technique known as "semi-reduction", where the process is only partially protected from air exposure. The must undergoes natural settling, followed by temperature-controlled fermentation in stainless steel tanks over several days. Approximately 15% of the must is aged in French oak barriques, adding complexity and structure. The two components are then blended and complete their maturation in stainless steel.
