Vinification
Nero d’Avola is harvested at the end of August. During the rosé vinification process, the grapes undergo cold maceration for about 12 hours, followed by gentle pressing to extract just enough color from the skins while preserving the freshness of the fruity aromas. Fermentation then takes place at a controlled temperature of 60–64°F to retain the wine’s fresh and vibrant character. After fermentation, the wine rests on the lees for a few months, enhancing its roundness and maintaining its aromatic brightness.
