Production area The grapes are cultivated in Sambuca di Sicilia and in Acate. In Sambuca, the wine tends to be more mature and structured, while in Acate, it is more delicate and fruity.
Grapes Syrah
Flavour Profile Bright ruby red in color, this wine offers a warm, persuasive bouquet with spicy notes of black pepper and thyme over a base of wild berries. On the palate, the tannins are velvety and pleasantly smooth.

Pairings
It pairs well with savory cold cuts, grilled red meats, game, smoked and herbed cheeses, and is unexpectedly delightful with seafood dishes.

Vinification

It is an average to late-ripening varietal, reaching maturity around the end of September. The grapes are harvested at perfect phenolic and aromatic maturity. After destemming, alcoholic fermentation with skin contact takes place over several days. Malolactic fermentation occurs with selected bacteria, followed by extended maturation in French barriques.
